MOORESTOWN, NJ – Symphony Pastries, a family-owned manufacturer of European-inspired and traditional American desserts, has acquired the pastry division of Classic Cake. The deal brings together authentic pastry portfolios from two established Philadelphia-area bakery operations.

With Classic Cake’s distribution and American dessert expertise, Symphony will have the resources to grow its pastry presence across foodservice, hospitality and retail markets. The merger also creates new opportunities for the baking company to expand its product portfolio and respond to evolving customer needs.

Symphony Pastries was acquired in 2024 by brothers Brett, Barry and David Kratchman. Barry Kratchman, who also owns Classic Cake, will continue operations at the company’s Cherry Hill, PA-based retail bakery and keep the Philadelphia wholesale/private label cheesecake production facility separate.

“Growth for us is not simply about producing more; It’s about investing in the capabilities that allow us to be a better partner to our customers while preserving the craftsmanship and quality behind every dessert.” — Brett, Barry and David Kratchman | owners | Symphony Pastries

“This is a natural next step for Symphony and for our family,” the brothers said in a joint statement. “We are bringing together two complementary pastry traditions, decades of experience and a shared commitment to quality. Most importantly, it gives our customers greater variety, expanded capabilities and even more opportunities to collaborate with us on desserts that meet their specific needs.”

The combined portfolio includes tiramisu, European-style fruit and chocolate tarts, seasonal Yule Logs and other specialty pastry offerings, such as Opera Cake. Symphony will use the acquisition to explore new product development across a range of categories, including mini desserts, dessert bars and private label offerings. A new Private Label Innovation Program will expand Symphony’s ability to collaborate with customers on proprietary concepts, custom flavor development and flexible production.

Symphony’s next stage of growth includes plans for a new state-of-the-art production facility scheduled to open in 2027. The facility will increase production capacity while adding new manufacturing lines, advanced technology and upgraded packaging systems. The new capabilities will include sheet cake and dessert bar lines designed to support national distribution, private label partnerships and higher-volume programs.

“Growth for us is not simply about producing more,” the Kratchman brothers added. “It is about investing in the capabilities that allow us to be a better partner to our customers while preserving the craftsmanship and quality behind every Symphony dessert. Bringing Classic Cake’s pastry division into Symphony, followed by our planned facility expansion, represents an exciting next chapter.”
