PUYALLUP, WA — As foodservice operators balance rising costs, allergen sensitivities and fluctuations in consumer purchasing behavior, solutions that simplify back-of-house operations without compromising quality are helping to calm the chaos.

Antonina’s Gluten-Free Bakery is among those meeting these needs with its new line of foodservice bakery solutions, including individually portioned muffins, brownies, homestyle cornbread, and bundt cakes, all packaged in convenient trays. Shipped frozen, the products fit seamlessly into breakfast service, grab-and-go programs, catering, dessert menus and a host of other foodservice applications.

“Most grocery store retailers and foodservice operators are not baking from scratch … When they don’t have the equipment, the team or the time, the talented labor for their regular bakery products is going to become even harder for something that has to be handled carefully,” said Kay Conley, director of R&D at Antonina’s Gluten-Free Bakery.

Since Antonina’s products are baked in a dedicated gluten-, peanut-, and tree nut-free facility, operators have the flexibility to serve a single premium bakery program to every consumer, rather than maintaining a separate gluten-free case.

With up to 1 in 20 Americans experiencing gluten intolerance, according to Cleveland Clinic data, that flexibility directly translates into serving more consumers without added back-of-house complexity.

“Being able to offer something that is made the way that we make our retail products and have something easy for the operator to use is a huge benefit and the key to having a successful program that their customers can feel confident about; they’re getting something that not only tastes great but is safe as well,” Conley said.

The new line of products has a frozen shelf life of 270 days from the date of manufacture; once thawed, muffins, bundt cakes, and cornbread hold for 7 days at ambient temperature, while brownies hold for 14 days.

“Anytime you can have something pre-made and frozen, it gives the operator the control over how much they’re going to take out of the freezer and what they’re going to thaw,” Conley said. “They don’t need to thaw a whole week’s worth of product. If they wanted to just take out a few at a time, they can overwrap the tray and keep it in the freezer, and then everything stays readily accessible but also fresh.”
