NEW YORK — Tom Cat Bakery, a producer of artisan breads, collaborated with Japanese company Yamazaki Baking to create a line of artisanal Japanese Milk Bread products for retail and foodservice customers.

This marks Tom Cat’s debut into retail, following nearly four decades of crafting bread products for New York’s Four-Star dining scene.

The bread, also known as Shokupan, is made with all-natural ingredients and sweetened with honey and heavy cream.

Tom Cat acquired special equipment and followed the yudane method, in which flour and water are pre-cooked before being added to the dough, to create this product. This process gives the milk bread its signature springy and fluffy texture.

In addition to the Shokupan, the bakery also released a seeded pull-apart roll and burger bun to provide an innovative way to use milk bread.

Tom Cat’s Japanese Milk Bread products are available to foodservice customers through Dot Foods and in retailers nationwide in new Tom Cat-branded retail packaging.
