KANSAS CITY, MO — Middleby Bakery, in partnership with Fritsch, announced the 2024 Ideation Baking Summit, set for April 3 and 4 in Plano, TX.
The two-day event will include speakers covering an array of topics, networking opportunities, demonstrations, a bakery tour and a tasting experience.
The demonstrations will include FRITSCH MULTIFLEX, Auto-Bake Vacuum Cooling and Middleby RapidBaking showcased through the making of an apple Danish with almond cardamon spiced streusel topping and baked empanada with cured ham, ricotta, and cilantro.
Ideation Baking Summit speakers include Kristen Spriggs, executive director of the American Society of Baking; Cyrille Filott, global strategist for Consumer Foods, Packaging & Logistics at Rabobank; and Scott McCally, president of Middleby Brands.
Attendees will also learn from Ben Kansakar and Chef Nicolas Nayener, CEO and R&D lab manager of Eurogerm KB, respectively. The pair will cover product concepts and technical ingredients for laminated dough products.
Joanie Spencer, editor-in-chief of Commercial Baking, will lead the Baker Round Table discussion alongside Kasia Jasper, planning team solutions engineer and food technologist for Middleby, and other bakery and industry professionals.
There will also be a plant tour of The Cloud Bread Co. bakery, which produces gluten-, grain- and sugar-free low-carb cloud bread.
At the close of this year’s event, attendees will get to tour the Middleby Innovation Kitchen in Dallas and participate in a tasting at the facility.
