ROSEMONT, IL — US Foods, a leading foodservice distributor, launched its spring 2025 issue of Scoop, which highlights 18 new products designed to provide foodservice operators with versatile, high-quality and labor-saving solutions.

The launch of the issue builds off the momentum of more than $1 billion in sales for US Foods’ Exclusive Brands’ products launched in Scoop for the inaugural 2024 issue.

“We are thrilled to announce that the annual sales of products launched in Scoop surpassed the $1 billion mark for the first time in 2024,” said Stacey Kinkaid, VP of product development and innovation at US Foods. “At US Foods, we are committed to bringing our operators more high-quality, innovative products that will enable them to create memorable, differentiated and profitable menu offerings. In this spring Scoop lineup, we’re excited to highlight a variety of inventive and authentic flavors along with behind-the-scenes insights into the inspiration and process that our product development experts used to create the products.”

A few noteworthy items from the spring issue include non-dairy butter, gluten-free hamburger buns and Basque cheesecake, all of which are quickly gaining traction on menus.

According to a study from Datassential, plant-forward products are projected to rise by more than 55% over the next four years. Glenview Farms’ Unsalted Non-dairy Butter helps operators save on food costs and provides a plant-based, vegan option that delivers on taste and texture and can be used as a one-to-one substitute for dairy-based butter.

US Foods’ brand Hilltop Hearth’s Gluten-Free Slider Bun and Gluten-Free Hamburger buns are ideal for sliders, burgers and a variety of sandwiches. As gluten-free formulations advance, these products cater to diverse dietary preferences while also helping to avoid food waste.

Basque cheesecake is also projected to grow 183% on US menus over the next four years, according to the same study from Datassential. US Foods product developers created the Chef’s Line Basque Cheesecake to deliver a consistent experience with the signature creamy texture that’s a trademark of the dessert from Spain’s Basque region. With simple ingredients such as cream cheese, whipping cream, sugar and eggs, the cheesecake offers foodservice operators a clean ingredient label and saves 60 minutes of labor per case.
