LYNDEN, WA — Rubicon Bakers is taking its Vegan Lemon Raspberry Cupcakes nationwide through a new partnership with Washington farmers and retail giant Kroger.

The Washington Red Raspberry Growers, a commission supporting raspberry growers, collaborated with the bakery on a regional level last spring, where this flavor launch enjoyed popularity amongst consumers. The growing group worked with Rubicon’s R&D team to nail the perfect formula, including raspberry puree in both the filing and the icing.

“We believe in creating baked goods you can feel good about enjoying, and our Vegan Lemon Raspberry Cupcakes are no exception. The pink color in the icing and filling comes entirely from the vibrant red raspberry puree we source from Washington red raspberry growers,” said Andrew Stoloff and Leslie Crary, co-owners of Rubicon Bakers. “We’re thrilled to see how excited our customers are about this product, now available nationally, and we’re proud to continue working with Washington red raspberry growers.”

The vegan flavor highlights the crop of family farmers in the state of Washington, where over 90% of the nation’s frozen red raspberry crop is produced. The berries are picked at peak ripeness and frozen within hours after harvest, which locks in maximum freshness and nutritional value. The packaging of the cupcakes will be stamped with the grower’s association’s logo, which marks the first spotlight for the group on a consumer packaged good.

To commemorate the national launch, The Washington Red Raspberry Growers will donate $1 for every pack of cupcakes sold to FareStart, a community impact group that aims to transform the lives of people in poverty through food and job training,  up to $10,000. The donation goal is in tandem with Rubicon’s own corporate mission, “bake a better world.”

The cupcakes come in packs of four with a suggested retail price of $5.99 and are now available in 1,800 retail locations.
