Partnership strengthens Eshbal’s North America presence

VANCOUVER, BRITISH COLUMBIA — After a series of strategic moves and acquisitions in 2025, Eshbal Functional Food, a food tech company focused on gluten-free and better-for-you offerings, announced its latest partnership to bring its products to North American consumers.

Eshbal is working with Toronto-based Queen St. Gluten Free Inc., a specialty manufacturer of gluten-free foods such as bagels and breads, to help it produce baked goods for the North American market. Commercial production is anticipated to begin in Q1.

“This agreement represents a significant operational milestone for Eshbal as we continue building our North American platform,” said Avi Markus, chief commercial officer of Eshbal for North America.

As part of this partnership, Queen St. Bakery will manufacture various products in Eshbal’s portfolio, such as its gluten-free pita bread. To support this process, the Eshbal team supplied the necessary equipment to execute this process and lent its R&D team’s knowledge to help Queen St. Bakery understand the production details. Additionally, the company is also supplying its proprietary flour blend to the Queen St. facility.

“We’re excited to partner with Eshbal to support the local production of their gluten-free pita products,” said Tony Ayala, president of Queen St. Bakery. “We believe these products fill a significant gap in the market. We look forward to working closely with the Eshbal team.”

The Canadian company’s proximity to the US border will help Eshbal with its supply chain efficiency. Additionally, producing these offerings at the Toronto facility will help the baking company leverage the ideal sourcing conditions for the core gluten-free ingredients vital for these offerings.

“Working with Queen St. Bakery enables us to localize production, align shipment schedules and ensure first-rate quality with a trusted manufacturing partner,” Markus said.
