MINNEAPOLIS — General Mills Foodservice’s newest innovation, Gold Medal All Trumps Dough Balls, offers a labor-efficient, easy-to-use dough ball format to create New York-style pizza crusts.
This comes on the heels of General Mills Foodservice’s 2022 acquisition of TNT Crust, which broadened the company’s offerings for back-of-house.
“We continue to hear from customers who struggle with staffing, which can lead to dough inconsistencies,” said Tom Santos, senior technical training specialist for General Mills Foodservice and a member of the Doughminators, a team with rich knowledge of flour and technical baking expertise. “With the All Trumps Dough Ball, we wanted to give pizza makers an efficient solution that makes it easier for them to get the consistent results they rely on without sacrificing quality.”

The dough balls are made from Gold Medal All Trumps flour and are available in 8-, 16-, 20- and 24-ounce sizes. Packed in bulk to eliminate excess packaging, the pre-flattened shape of the dough balls offers flexible slack time.
