MUNICH — The countdown to iba 2023, set for Oct. 22-26, has started, and the world’s leading trade fair for the baking and confectionery industry is sharing details about what participants can expect when they arrive in Munich.

The trade fair will focus on four main topics: artisan baking, digitalization, food trends and sustainability. Artisan baking events include show floor exhibits, action areas, lectures in the iba.Speakers Area and the iba.Forum, the German Championships of Master bakers, and the iba.UIBC.CUP of Bakers and Confectioners.

The German Bakers’ Confederation (Stand 230, Hall A4) will provide a look into German bread culture and its traditions. The organization will also offer two daily tours focused on artisan baking and provide information on training and educational courses available through the Association of Academies of the German Baking Trade.

“The bakery trade is popular and enduring,” said Michael Wippler, president of the German Bakers‘ Confederation. “Especially in this day and age, people appreciate the reflection on traditional craftsmanship, paired with innovations and regional raw materials.”

In the two artisan bakery halls (A3 and A4), participants can visit with exhibitors and taste-test a range of products, including croissant varieties, Danish pastries and new snack ideas. They can also see the latest innovations in baking technology in action. Hall A4 will also feature industry startups that will present their ideas and solutions for artisan baking.

Participants interested in hearing from industry experts will have access to a wide range of lectures on topics ranging from bread quality through long-time methods, to current snack trends, to how and why artisan baking must change.
