LONDON — According to The Business Research Co.’s research report on the global bakery products market outlook, trends in the market are focusing on health-conscious consumers.
Bread and bakery manufacturers are offering low-sugar cakes and pastries as individuals are increasingly becoming concerned with health and wellness. Low-sugar cakes and pastries are made using natural sweeteners such as honey, stevia and maple syrup, which can simplify a product’s ingredients list and win over shoppers who care about quality and transparency.
According to the International Food Information Council’s 2020 Food and Health Survey, around 74% of respondents said they were trying to limit consumption of sugar.
Companies aren’t just adjusting ingredients; they’re also starting to offer more products in smaller portions, due to the rising awareness about the effects of sugary cakes and pastries. Small portion sizes and lower prices allow people to limit consumption and try different products.

For instance, Schulstand Bakery Solutions offers pastries in small sizes due to rising popularity, especially among millennials. The research firm Mintel conducted a survey of 1,854 adults who purchased chocolate online in 2018. The firm found that 49% of buyers said they would like to see more chocolate in mini-sized bars or bites.
This trend illustrates how companies can meet the growing demand for healthier treats without sacrificing taste.
