BOSTON — Fancypants Baking Co. launched two new limited-edition spring flavors: Lemon Tart and Strawberry Shortcake.

“With our new limited-edition Lemon Tart and Strawberry Shortcake flavors, we wanted to lean into the seasonality of spring and summer mixed with childhood nostalgia,” said Maura Duggan, founder and CEO of Fancypants. “We also wanted to create more dessert indulgent flavors that used berries and bright ingredients while keeping with our flavor philosophy of classic, approachable and innovative with a special fancy twist.”

The Lemon Tart flavor features fragrant lemon oil and a sprinkle of Spanish lemon zest while the Strawberry Shortcake cookies include bits of real strawberry and creamy white chocolate chips.

“These elevated flavors will delight Fancypants fans who are ready for warmer weather and delicious, crispy bite-sized cookies,” Duggan added.

The new additions are sold online and at Nugget Market and Alltown Fresh. Fancypants’ spring flavors will also be available at Central Market, the brand’s main retail partner in Texas, by the end of the month.

The crispy cookie company is Upcycled Certified, baking with upcycled oat flour made from dried and milled oat pulp left after making oat milk. Combined with King Arthur Baking Company’s flour, Fancypants is committed to tackling sustainability and operating a zero-waste facility.
