CHICAGO — Datassential, a food and beverage marketing intelligence platform, released its “2025 Trends” report, an annual comprehensive outline of emerging consumer inclinations.

This year’s report focuses on 10 foods, flavors and beverages poised to experience rapid growth in 2025, along with five trends Datassential experts predict will gain traction in the many years ahead.
The report includes the following trends set to impact the commercial baking industry:
Saffron. This spice is known for its golden color and subtle floral, earthy flavor. While traditionally used in global cuisines like Persian, Indian and Spanish dishes, saffron is finding new applications in desserts and snacks.
Pastina. Often associated with childhood comfort food, this tiny star-shaped pasta is being reimagined in trendy desserts like pies and cakes.
Yerba Mata. This South American herbal tea is known for its earthly flavor, and experts predict it will soon be incorporated into desserts like bundt cakes and scones.
Bonito Flakes. This thin, dried flake of fermented tuna adds an umami punch to fusion recipes. While a staple in Japanese cuisine, Bonito Flakes are expected to be included in innovative snacks.
