CLEVELAND — Camelot Bakery, a locally owned and operated wholesale and specialty bakery, has maintained its residence on Cleveland’s west side for a decade. The wholesale bakery supplies jumbo pretzels to Merwin’s Wharf and other locations throughout the area, shutting down its plant every Wednesday to pause pastry production and focus on its pretzel line. Reason being? They don’t have room to do both.

That is, until recently, when husband-and-wife owners Rebecca and Joe Starr completed their first purchase to facilitate expansion plans. With the acquisition of the building and lot next to the original location, the owners are looking to build a 10,000-square-foot production facility, which would allow the bakery to expand capacity and hire additional staff.

“If we have the capacity, how big can we take it?” Joe Starr said, noting that his employees currently work in shifts because of the small size of their building. “It’s not like, ‘Build it and hope the business is there.’ The business is already there. If we don’t do it, then we’re missing out on opportunities for growth.”

The plan is to build a separate production facility on the vacant parcel and turn the existing building into a retail bakery space. The project is expected to cost upwards of $1 million, with the groundbreaking set for this spring.

“We’re looking at returning it to its history, which is some kind of retail,” Joe Starr said. “We’ll start with setting up an online ordering system where people can come and pick up.”

With annual revenue exceeding $1 million, the Starrs are confident the new space will enable their team to expand and meet growing demand for its sweet and savory goods.
