For the team at Companion Baking, the craft is more than their bread and butter. It’s a chance to help someone tell a story on a plate.
Commercial Baking editor-in-chief Joanie Spencer and managing editor Liz Goodwin saw the spirit of this St. Louis-based bakery firsthand in the February | Q1 issue. Founder Josh Allen and innovation leader and QA manager Josh Galliano are baking a culture of “yes” into their process, allowing the bakery to serve foodservice and retail outlets from the Rocky Mountains to the Appalachians.
Companion’s facility is a living and breathing homage to the art of baking. The operation lies behind a large set of windows in one of its two bakery-café locations, giving guests a glimpse at the process behind their sandwiches and sweet goods.
