MUNICH — Among the topics covered at iba 2025, set for May 18-22 in Dusseldorf, artisan bakery will be a primary focus.

More than 62,000 square feet of exhibit space at the trade fair is dedicated to this segment of the baking industry. The German Baker’s Federation, which organizes iba, is dedicated to improving the framework conditions in bakery and promoting education and training for it.

“We are committed to the strong future of the baking industry in Germany,” said Roland Ermer, president of the German Baker’s Confederation. “Demographic change is also leading to a shortage of skilled labor. That’s why the issue of promoting young talent is particularly important to me.”

Artisan baking will be infused in various areas of the show. In the iba.ACADEMY in Hall 14, attendees can learn about and obtain a certificate on the art of pretzel baking.

On May 18 at 11, 50 outstanding artisan bakeries will receive the Honorary Prize of the German Bakery Trade, a distinction given to those who have been awarded gold in the quality tests administered by the German Bread Institute.

Bakers can also showcase their skills through various competitions such as the UIBC Cup of Bakers, IBC Cup of Confectioners and the World Championship of Bread Sommeliers.

Ahead of this year’s show, Bakery of the Future, a new design competition, will focus on shop fitting, and participants can submit their visions through March 21. The jury and audience prizes for best ideas will be announced in the iba.FORUM on May 20.

Exhibitors with offerings optimized for artisan baking operations will be available in Halls 13 and 14.
