RICHMOND, CA — Rubicon Bakers, a Certified B Corp and maker of scratch-baked goods, announced the acquisition of Salt Lake City-based Lucky Spoon Bakery, a gluten-free sweet baked goods manufacturer.
Annie Hollon is a journalist, copywriter and social media strategist from the Dallas, Texas area. She found a love for magazine writing during her time at the University of Alabama where she graduated with a Bachelor of Arts, double majoring in public relations and English. RICHMOND, CA — Rubicon Bakers, a Certified B Corp and maker of scratch-baked goods, announced the acquisition of Salt Lake City-based Lucky Spoon Bakery, a gluten-free sweet baked goods manufacturer.

Lucky Spoon’s offerings, available at grocery stores nationwide, include cakes, cupcakes, cookies and brownies. The acquisition of the Utah bakery strengthens Rubicon’s commitment to offering products that meet the needs of consumers with dietary requirements or preferences.
As part of the acquisition, Pam Schulte, founder of Lucky Spoon will join the Rubicon Bakers leadership team.

The acquisition makes Lucky Spoon the third brand in Rubicon’s bakery portfolio. Rubicon Bakers previously acquired Fairfield, CA-based Just Desserts in 2021.
