The rising prevalence of lifestyle-related diseases and gluten sensitivities have been driving demand in this product sector. Many food manufacturers and marketers are also linking gluten-free products to other rising trends, bringing buzzwords like clean label and plant-based together to gain traction.

High demand for gluten-free bread makes the bakery segment projected to realize the fastest growth over the forecast period. Online channels are also expected to have a rapid growth rate as more and more consumers transition to online shopping.

The report states that the US is one of the top countries for gluten-free product consumption  due to the number of people suffering from Celiac disease and those who experience similar symptoms from other food sensitivities. A gluten-free diet is also popular among consumers with no medical need for it, predominantly driven by a consumer perception that it can help manage weight and other health benefits, although some institutions say there is no evidence for the scientific accuracy of these perceptions (or that the weight loss caused by going gluten-free is often from other factors).
