LAS VEGAS — With the popularity of cannabis-infused foods at an all-time high, the International Baking Industry Exposition (IBIE), which took place Sept. 18-21 in Las Vegas, partnered with Cannabis Products, a publication covering cannabis food and beverage trends, to launch the Cannabis Central pavilion. Located in the North Hall of the Las Vegas Convention Center, the new pavilion highlighted cannabis baked goods and offered attendees the opportunity to meet with suppliers who support the cannabis space and learn from experts during sessions on stage.

“IBIE presented this opportunity to us about eight months ago, and the idea was that we would be representing companies that would change the narrative of cannabis baked goods, food and edibles,” said Chris Davis with The Vivid Team. “It’s about educating people to understand the food science aspect. It’s about understanding that there are levels of cannabinoids that you can administer to people in a safe way while still enjoying popular products.”

The pavilion was a must-see destination for those interested in learning about the business challenges and opportunities in the cannabis foods space. Attendees learned about the nuances of working with this popular ingredient in terms of R&D, legal and regulatory, manufacturing, labeling, packaging, sourcing, distribution, and commercialization.

“We were able to explain to attendees that cannabis is just another ingredient you’re using,” Davis said. “It’s just like flour, eggs or water. Once you understand the proper dosage, then it’s easy. That’s what I think people came to hear.”

From trends and product innovation to go-to-market strategies and manufacturing insights, content on the pavilion’s main stage provided bakers with the knowledge and intelligence to launch or scale operations. Over the course of three days, IBIE presented 11 educational sessions by leading voices in the cannabis industry. For example, MJBiz/Marijuana Business Daily CEO Chris Walsh presented “The $25B Cannabis Opportunity: Data, Trends & Paths to Entry,” and Steven Schain, senior counsel at the Schain Law Firm, presented “How to Infuse Baked Goods with Cannabis-Derived Products … LEGALLY.”

The pavilion featured eight exhibitors with companies that offered a variety of cannabis-related products and services from packaging solutions and architecture and engineering services to product development and distribution systems.

After the show floor hours, Cannabis Central hosted a happy hour and after party at the Sahara Las Vegas with special guest and host Bow Wow, American rapper and Billboard Music Award winner.
