GORINCHEM, NETHERLANDS — AMF Bakery Systems will showcase its latest sustainable baking innovations at iba 2023, set to take place October 22-26 in Munich.
Ovens account for a significant proportion of the carbon emissions produced by industrial bakeries. AMF’s solutions are designed to reduce the carbon footprint in bakeries while enabling them to achieve high-quality results by reducing the use of natural gas in the baking process.
AMF Den Boer’s Multibake VITA tunnel oven is a fully hydrogen-powered oven that features AMF’s patented hydrogen burners. The system causes no direct carbon dioxide emissions and is available in grids for sheet pans, mesh belts, stone plates for pizzas and flatbreads, and a variety of other products. All existing Den Boer hybrid ovens are hydrogen-ready and can be converted to use the fuel.
Switching from gas to electric ovens also reduces the carbon footprint of bakery operations. AMF’s modular oven system permits the creation of multiple heating chambers, where the temperature can be set individually to optimize product baking curves.
The AMF Sustainable Oven Service (SOS) combines artificial intelligence, advanced sensors and the AMF Bakery Intelligence cloud to provide optimization recommendations. All functions are monitored, with data such as temperature, airflow, occupancy and energy consumption tracked and logged for analysis.
