CHICAGO — ADM released four flavor and color trends that reflect changing consumer behaviors and will drive product innovation in the new year.

“Color trends and corresponding flavors in foods and beverages provide unique insights into the human condition, revealing how we are responding and adapting to macro forces far beyond the table,” said Helene Moeller, VP of global product marketing for flavors and colors at ADM. “From focusing on well-being for themselves and the planet, compounded by concerns for affordability, the color and flavor trends we identified in this report indicate what foods and beverages consumers will reach for on product shelves.”

The company’s color and flavor experts dove into consumer purchasing behaviors and trends online to narrow down the key themes. They also looked at industries outside of food and beverage for a broader scope and used artificial intelligence for further insights.

“Color is at the epicenter of the food, fashion and content that the world consumes,” Moeller said. “We also know that flavor trends are dynamic, affected by cultural events, viral social media phenomena and emerging consumer tastes.”

Luxe Self-Expression

This trend puts indulgence front and center. With a bit of a digital twist as well, consumer interest surrounding food trends online has caused a piqued interest in finding said trends in the CPG space. The flavors that inspire this trend include caramelized fruit, cinnamon sugar, sweet and umami. The expression portion of the trend also ties to the uptick in sustainability, as consumers seek to purchase products that align with their own values.

Dare to #Dupe

Contrasting indulgence, this trend follows the increased consumer interest in affordable goods. Though the term dupe is often used regarding beauty products, the term is being co-opted by the food and beverage space as a nod to premium private labels granting consumers a taste of luxury without the steep price tag. ADM’s theme prediction also nods to an “authentic” flavor experience as an interest to consumers in the form of nostalgia or familiar flavors in alternative goods.

Health Without Stealth

In this theme, ADM notes an increased interest in consumers’ curiosity in products that provide a function beyond fuel. Whether it be beneficial to digestive health or labeled with health claims such as reduced sugar or low fat, there will be an added emphasis from consumers for better-for-you products without compromising taste. Popular flavors here include blood orange, yuzu florals and cherry blossom.

Breaking Boundaries of Taste and Color

Unconventional colors, flavors and eating experiences are expected to spike in 2024. Unique flavors from regions such as Asia, South America and the Mediterranean are anticipated to disrupt the food and beverage category, this includes the flavors grape and lychee. In addition to abstract flavor experiences, viral social media content is driving consumer interest in vibrant, high-sensory experiences at the table.
