Lesaffre’s Livendo Liquid Wheat Sourdough is recommended for a variety of baked goods, including breads, rolls, baguettes and those where sourdough flavors are desired. Using a proprietary strain of Lactobacillus, the wheat flours are fermented for high acidity to create a strong sourdough flavor. They are non-GMO, kosher, vegan and carry a clean label.
The addition of liquid wheat sourdough does not require any formulaic changes. It can be added directly to the flour at 0.5%-2% of the total flour weight.
