CHICAGO — Eli’s Cheesecake celebrated the expansion of its bakery with a ribbon cutting on Oct. 10. The baking company broke ground on this project July 26, 2022.
“Today we are one of the largest specialty cheesecake and dessert companies in the country,” said Marc Schulman, president of Eli’s Cheesecake. “The ability to find a talented workforce, educational partners and access to transportation make Illinois a great place to do business. We attribute our success to following my Dad’s pearls of wisdom: ‘Charity will never bust you’ and, ‘Treat others as if you were the other.’ We are delighted to have this additional space to expand our dessert selection and create more jobs here in the city and state we love.”
Local and state leaders including Illinois Gov. JB Pritzker and Lt. Gov. Juliana Stratton attended the event.

“A family-owned bakery — three generations strong, Eli’s Cheesecake is an iconic Chicago-staple,” Gov. Pritzker said. “Thanks to a $10 million investment and competitive hiring incentives from our EDGE tax credit program, Eli’s Cheesecake was able to complete a 42,000 square foot expansion — bringing this facility size to a whopping 104,000 square feet. And, of course, more capacity brings jobs for the people of Illinois. More jobs, more customers, more cake: it doesn’t get much better than that.”
This is Eli’s first expansion in almost 30 years. The additional square footage almost doubled the size of the Chicago bakery. Along with more space for operations, the expansion included the baking company’s corporate offices and Eli’s Cheesecake Bakery Cafe.
